Back by popular demand, we have re-posted our sausage and potato recipe.
Cajun sausage and potatoes
Ingredients:
5 red potatoes cut into uniform cubes
2 lbs. sausage-any highly seasoned sausage will work-cut into 1/2” pieces
3 Tbs butter
4 cups water
Process:
Pour water into (average size cooking pot) pot and add sausage and butter. Bring to a boil and cook for 30-45 minutes (this tenderizes the sausage before the potatoes go in).
Add potatoes and boil (simmer) until potatoes become soft but still have some firmness (we're not making mashed potatoes). This should take about twenty to thirty minutes. There should be just a little bit of water left at the bottom of the pot that will combine with some of the potatoes to make a thick brown gravy. This gravy will coat the sausage and potatoes and create the most delicious sausage and potatoes you have ever tasted.
*You can add some Cajun seasoning to the water if you want more flavor: Onions, garlic, bell pepper, Tony Chacheres, etc.
